Chickpeas are a legume crop of Asian origin, one of the most common in the world. It is less demanding on fertile soils and has a high drought tolerance. It is characterized by a high protein and fiber content, and the flour obtained from it is naturally gluten-free. The chickpeas used for Alce Nero chickpea flour are grown exclusively in Italy. Millstone grinding of chickpea flour ensures uneven grain size.
It is a natural source of fiber and protein and is ideal for making farinata, cookies, pancakes and falafel.
